I wanted to make these bars more exciting, so I topped them with cinnamon cream cheese frosting. It pairs so well with the extra sweetness of white chocolate.

Ingredient Notes

  • Unsalted butter- Melt it and let it slightly cool. If it is too hot, it will cook the eggs.
  • Brown sugar- I used light brown sugar.
  • Egg yolk- The extra egg yolk gives it a more gooey texture.
  • White chocolate chips- Use actual white chocolate chips vs vanilla flavored white chips. I love Ghirardelli.
  • Cream cheese- Use full fat cream cheese.

Step By Step Instructions

Here are the steps to make and bake these white chocolate blondie bars. This recipe doesn't need an electric mixer to make the batter! For the frosting, you can use a stand mixer with a paddle attachment or a hand mixer.

STEP 1: Melt the butter. The melted butter needs to be cooled to room temperature before using.

STEP 2: Mix the wet ingredients. Next, mix the butter, brown sugar, vanilla extract, large eggs, and egg yolk in a large bowl. This can be mixed with a rubber spatula.

STEP 3: Add the dry ingredients. Then, mix in the all-purpose flour and salt. Make sure to use a sifter to prevent flour lumps getting into the batter.

STEP 4: Mix in white chocolate chips. The recipe says ¾ths cup of white chocolate chips, but you can add up to 1 cup. Especially if you love white chocolate chips.

STEP 5: Bake the bars. Pour the batter into the 8X8- inch prepared pan. Then, bake the bars for 30-40 minutes. I baked these for 35 minutes.

Cool the bars completely on a cooling rack before taking them out of the pan..

STEP 6: Make the frosting. Beat the cream cheese and butter on high speed in a medium bowl. Then, add in the powdered sugar and cinnamon.

Next, add in the vanilla, salt and heavy cream.

STEP 6: Spread the frosting. Use a spoon or offset spatula to spread on top of blondies. Then, cut into squares.

Expert Tips

First, make sure to spray the entire pan with baking non-stick spray. Then, line it with parchment paper. This will make it a lot easier to remove the bars from the pan.

When the blondies are done baking, they will sink slightly. A slight sink means they are still gooey in the middle. If they sink dramatically, they need more time. If they don't sink at all, they are over baked.

For best results the bars need to cool completely before taking them out of the pan. If you try to remove them while they are warm, they will fall apart.

The frosting for these is optional, but it is a great way to make them more fun!

The bars were very easy to make. I opted to skip the frosting and added the 1/2 tsp of cinnamon to the bar batter, giving the blondie a subtle cinnamon flavor that went well with the white chocolate chips. Yum!

I can’t wait to give these a try! If I were to add eggnog to the mixture, about how much would you recommend?

Since the blondies don't have any type of milk ingredient I recommend not putting egg nog in the batter. However, you can add it to the frosting or make an egg nog drizzle! Replace the heavy cream in the frosting with egg nog.
      For the egg nog glaze:
      1 cup sifted powered sugar
      1 tsp vanilla
      1-3 TBSP Egg nog.

FAQs

What is the difference between a blondie and a cookie bar? ›

Of course, the primary difference is in the ingredients rather than the appearance. What type of sugar you use is the specific difference. For these sugar cookie bars, I used white sugar. A classic blondie, would use brown sugar and butter for a butterscotch type flavor.

Do blondies contain chocolate? ›

Unlike a Brownie, Blondies don't contain any cocoa powder. Other than that, the recipe is fairly similar. Both contain flour, sugar, butter and eggs, although you'll often add vanilla extract to a Blondie to replace the cocoa powder.

Are blondies meant to be gooey in the middle? ›

A good blondie should be chewy, gooey in the middle and firm around the edges. If you want to add an additional egg yolk to this recipe to make the blondies super gooey, you can! Just to clarify, that would be 1 whole egg plus 2 egg yolks. Try it if you like gooey blondies!

What did blondies used to be called? ›

The first recipe for blondies was published in 1896 by Fannie Farmer, a pioneer of modern American cookery. Notably, they were called brownies when the recipe was first published. However, her recipe contained vanilla and molasses instead of cocoa, which gave the blondies their golden color.

Why are blondies so good? ›

Instead, blondies are made with brown sugar for a rich butterscotch flavor and plenty of vanilla extract for a wonderful vanilla flavor. A good blondie is gooey, chewy, and a little fudgy. I think they're the perfect easy dessert, without chocolate overload, for when you want something a bit lighter and more vanilla-y.

What do blondies taste like compared to brownies? ›

Both have chewy textures. However, blondies have a much lighter and softer taste than brownies.

What are the white brownies called? ›

There are various names these confectionary items go by; they are most commonly known as blondies but they can also be called blonde brownies or butterscotch brownies. It's understood that much like the brownie, the blondies originated in the USA.

Is a blondie considered a cookie? ›

Technically, blondies and brownies are both classified as 'cookie bars'. That is, they are softer than cookies, but tougher than a cake.

What defines cookie bars? ›

A potluck staple, bar cookies (or bars) are made from a batter or stiff dough that is poured or pressed into a baking pan or baking dish, then baked, cooled and cut into bars, squares or diamonds. Bars can be single-layered (like brownies) or multi-layered – with cake-like or chewy textures.

What makes a blondie different from a brownie? ›

Blondies use vanilla extract and brown sugar instead of cocoa powder to get their flavor, while brownies use chocolate and cocoa. Plus, brownies usually include white sugar instead of brown sugar. So, now that you know the differences between brownies and blondies, it's time to try your hand at your own brownie recipe.

What is the difference between a bar and a cookie? ›

Bar Cookies are cookies that the dough is baked spread-out in a pan. The cookies are cut into “bars” after baking. Most drop cookies can also be made into bar cookies. Bar cookie dough is pretty stiff/firm like a cookie dough.
