These NO BAKE maplepancakebites are a fun twist on ordinary pancakes. Plus a great way to use up your favorite pancake batter without having to cook, whether it be buttermilk batter or vegan pancakebatter.All you need is maple syrup, nut butter, and banana chips!
Well hello weekend! Goodness, I never post on a weekend. Well, rarely. But this recipe couldn’t wait. In fact, I was itching to get it up.You see, I have been going through all my old healthy bite recipes from YEARS ago. I am pretty sure I have about 75 flavors. No joke! And I’m still working on one big BOOK OF BITES!
But some of these old pictures are making me cringe. It’s not that the picture is terrible, okay maybe just a little, but what makes me cringe is that the picture just doesn’t give the healthy bite any justice. Ya know? I mean, it kinda looks like a ball of dough. LOL! Gotta love the old iPhone pics.
So today, I’m sharing the REVAMPED version of my personal pancake bite. Oh goodness, so perfect for pancake Sunday, right? And you don’t even have to bust out the griddle. WINNING!
What I love about these bites is that they are so versatile. You can really use any flavor of pancake batter (vegan or paleo or whatever) and combine it with your favorite pancake mix-ins or toppings.
With these bites, I decided to go with the Flapjacked Banana Hazelnut pancake batter and then mix in crushed banana chips and Nuttzo nut butter. Which also had bits of hazelnut and cashew nut in it. Mix it all up with maple syrup, butterextract, and vanilla protein to coat the topping and you’ve got one perfect pancake bite. NO LIE!

Description
Maple Banana Pancake Bites {with Vegan Option}
Ingredients
Scale
- ½ cup Pancake Batter (I used flapjacked banana hazelnut batter)
- ¼ cup banana Chips (crushed)
- ⅓ cup almond meal/coconut flour/ or even protein powder
- ½ cup Nut butter (I used creamy Nuttzo)
- ¼ to ⅓ cup maple syrup.
- ½ tsp butter extract
- ½ to 1 teaspoon Maple extract (or vanilla if you can’t find maple)
- Mix it up with these add ins – 3-4 tablespoon of one of the following Chocolate Chips, dried fruit, trail mix, cinnamon, cocoa, granola, or chopped nuts!
Instructions
- Blend banana chips in food processor. Transfer into a large bowl and add in all the remaining ingredients with the syrup being the last . Add your extracts and and any other add ins. Mix well (I use my hands) then roll into bite size balls. Coat bites (once frozen) with extra vanilla protein or batter of choice. Could even use cocoa or peanut flour to coat.
- Makes about 18-20 balls. Freeze or keep in refrigerator to maintain freshness.
Notes
Note: You might have to add more nut butter or maple syrup depending on what flour you use (coconut, almond, etc).

I absolutely adore your fresh photo makeover! They are as satisfying to the eye as I know they would be to eat!
There’s just something about contrasting textures that is so appealing to me. You’ve managed to capture the senses—beyond just taste. I wish I had this talent, but like anything, I know it takes practice and time.

I can’t imagine you ever taking a bad picture! But I know what you mean about looking back on old ones! I cringe at most of my older food pics. I’ve been thinking of updating some of my older recipes! I think it’s a great idea and I absolutely love this flavor, so glad you did 🙂
