Maple glazed carrots are a perfect side dish for any meal and especially holiday dinners. They are simply brushed with simple ingredients of melted butter, maple syrup, and brown sugar then roasted until perfectly caramelized and fork-tender!

Maple Roasted Carrots

I love this time of year when all the root veggies take front and center! What better way to celebrate their natural sweetness of the carrots than to roast them?!

Simpleroasted carrotsare one of my favorites but the addition of maple syrup and brown sugar gives them a sweet and savory flavor that I just can’t get enough of, kind of like sweet potatoes.

Seriously though, these tender carrots are irresistible enough to eat them right off the baking sheet!

They’re made and ready to serve in 25 minutes making them the perfect choice for quick and easy side dishes for weeknight dinners too. My whole family loves them.

I will say that more often than not I save these easymaple carrots for Thanksgiving dinner or Christmas dinner. They look so rustic and glossy on the table next to your main course and other sides likethese slow cooker loaded mashed potatoes or this easy loaded potato casserole!

  • Carrots:Peeled and sliced lengthwise. I use about 1.5 lbs of whole carrots which serves about 4 people. Other kind of carrots you can use are baby carrots or multi colored carrots instead of plain large carrots.
  • Butter:Melted unsalted butter helps to coat the veggies evenly and gives them a wonderfully buttery flavor. Use olive oil if you’d like.
  • Pure Maple Syrup:Adds a bit of a sticky sheen to the carrots while giving them the best flavor.
  • Brown Sugar:Provides a molasses-flavored sweetness and nice caramelization.
  • Salt & Pepper:A savory seasoning to lend a bit of balance to the overall sweetness.

Variations/ Substitutions

1. For a salty, umami flavor addition, sprinkle the maple glazed carrots with Parmesan cheese along with the herbs.
2. You can replace the maple syrup with honey.
3. Add a little warmth to the dish by sprinkling in a little cinnamon.
4. Prefer to add heat? Throw in a pinch of cayenne pepper or red pepper flakes.
5. Use vegan butter if needed.
6. Add a couple of cloves of fresh garlic or a teaspoon of garlic powder.

What to Serve with a maple glazed carrot recipe?

How to Make this Roasted Carrots Recipe

This recipe will come together with 6 ingredients in under 25 minutes. You can’t go wrong with a simple, tasty dish like this one!

Step 1: Place the carrots in a single layer on a prepared sheet pans lined with either foil or parchment paper. Make sure they’re in a single layer without overlapping so they have the best chance to roast evenly.

Step 2: In a small microwave-safe bowl melt the butter then mix in the maple syrup, brown sugar, salt, and pepper.

Step 3: Brush the carrots with the buttery glaze on both sides. Bake in a preheated 350° F oven for 15-20 minutes.

Step 4: Once they are fork-tender, remove the carrots from the oven. Garnish with fresh herbs like rosemary, parsley, or thyme. Enjoy!

Tips

  • Firm carrots to begin with will result in a sweeter flavor once roasted.
  • Be sure to cut them all to a uniform size so they cook evenly.
  • I like the rustic look of longer carrots, but by all means, use baby carrots or cut them into rounds instead.
  • Adjust the cooking time depending on the size of your carrots. When they’re cut smaller they won’t need as long in the oven.
  • You can even decide not to peel them if preferred. Just remember to scrub them clean!
  • Use a rimmed baking sheet so the buttery syrup doesn’t make a mess.
  • Real maple syrup is the way to go. Not the stuff Aunt Jemima’s been cookin’ up.

Yes! Make these carrots ahead by cleaning, peeling, and coating them in the maple butter mixture and keeping them covered in the fridge overnight.

Keep them stored in an airtight container in the refrigerator for up to 3 days.

How to reheat them?

Pop them in the microwave to reheat. They won’t be crispy, but they’ll still taste amazing.

If you do want to try and get some crispness back, you could use the air fryer or the oven to reheat. They’ll have dried out a bit so you won’t have that as much syrupy coating as you did on day 1.

Ingredients

  • 1.5 pounds carrots
  • 3 tablespoons butter
  • ¼ cup maple syrup
  • 2 tablespoons brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 350° F and cover a baking sheet with aluminum foil or parchment paper.

  • Peel the carrots and slice them all lengthwise then place them on the prepared baking sheet in a single layer.

    1.5 pounds carrots

  • In a microwave-safe small bowl, add the butter and microwave for 30 seconds.

    3 tablespoons butter

  • Then add in maple syrup, brown sugar, salt, and black pepper and mix together well.

    ¼ cup maple syrup, 2 tablespoons brown sugar, ½ teaspoon salt, ¼ teaspoon black pepper

  • Brush the sliced carrots with the butter mixture, then turn them over and brush the other side as well.

  • Bake for 15 – 20 minutes or until fork-tender.

  • Remove them from the oven and garnish them with fresh herbs like rosemary, parsley or thyme.

Notes

Sprinkle with parmesan cheese.

Choose firm carrots to have a sweeter flavor.

Slice in even sizes so they cook evenly.

    My carrots were not roasted or cooked after 20 minutes so I raised the temp. To 375 and added 10 more minutes.
