Cookie Butter Fudge

The first time I tried speculoos cookie butter, I was an adult. Gasp, I know! And I was totally hooked!! I mean, it’s like putting together the smooth creamy texture of peanut butter with melt-in-your-mouth shortbread cookies.

Genius!! What took me so long to find this stuff?! Why had my parents never treated me to the amazingness that is cookie butter before?!

What is Speculoos?

If you’re wondering “what is speculoos??” let’s go ahead and break that down first.

Speculoos is a type of Belgian shortbread cookie. They are the type of cookie that is used to make cookie butter, the decadent dessert spread that was missing from my deprived childhood (I kid, I kid).

Trader Joe’s is famous for their speculoos cookie butter, as is Biscoff. Those would both work great in this cookie butter fudge recipe (you can see we used Biscoff from the photos, but either will do perfectly!)

What is Cookie Butter Fudge?

My friend Jennifer is a master at whipping up simple no-bake fudge recipes, like this hot cocoa fudge. When she told me about the speculoos cookie butter fudge she made recently I knew I had to share it with you guys!

This speculoos fudge recipe only takes 5 minutes to whip up (plus time to cool/chill) and only 2 ingredients. As you guessed, one of those is cookie butter!

Another perk to this Biscoff cookie butter fudge recipe is that it is more budget friendly — storebought fudge can be spendy y’all!

If you’re a cookie butter lover like me, then you will love this cookie butter fudge! It has the same sweet taste of speculoos cookies, but the decadent richness of a fudge!

How to Make 2-Ingredient Biscoff Fudge

Prepare a small baking dish (or loaf pan) with non-stick cooking spray.

Place the vanilla almond bark or white chocolate chips in a microwave-safe bowl and heat for 30 seconds. Continue heating in 15 second intervals, stirring between, until melted.

Stir cookie butter into the melted white chocolate.

Stir until the mixture is smooth and well combined, then scoop into your prepared pan. Use a spatula to smooth then surface.

Refrigerate for at least 2 hours.

TIP: If making ahead, you can refrigerate overnight too!

Cut the cookie butter fudge into 1″ squares. Store in an airtight container at room temperature or in the fridge.

Ingredients

  • 1/2 Package White Almond Bark OR 1 package white chocolate chips (11.5oz)
  • 1/2 Cup Cookie Butter

Instructions

  • Grease and line a loaf pan or small 6" x 4" casserole dish. Set aside.

  • Place the vanilla almond bark or white chocolate chips in a microwave-safe bowl and heat in 15-30 second increments, stirring in between, until melted.

  • Stir cookie butter into melted white chocolate until smooth and well combined.

  • Spread cookie butter fudge mixture into your prepared pan and smooth down with the back of a spoon or an offset spatula.

  • Refrigerate at least 2 hours.

  • Cut the cookie butter fudge into 1" squares.

Notes

To Store: Keep in a cool place, away from sunlight or heat, no more than room temperature. May also be kept in the fridge in a sealed container.
