The gooey brownie in a mug was adapted from my healthy chocolate mug cake, which is one of the reader favorite recipes on my site.

To turn it into a single serving brownie, I played around with the ingredient ratios and also added some Dutch cocoa to give it that ultra rich, deep and chocolatey classic brownie flavor.

Brownie mug cake ingredients

For the cocoa powder: The recipe calls for both regular unsweetened cocoa powder or cacao powder and Dutch process cocoa powder. If you can only find regular cocoa, it still works without Dutch. The brownie mug cake will just not have as much of a rich traditional brownie flavor.

What type of flour? You can use white all purpose flour, whole grain spelt flour, or oat flour. There is also a keto option included in the recipe. I have not tried almond flour, coconut flour, or whole wheat flour here and therefore cannot recommend those.

For the fat: The video uses coconut oil,but you can substitute any neutral oil or your favorite healthy nut butter of choice, such as peanut butter or almond butter.

While I haven’t tried a low fat version, many readers have written in to say they’ve had good results replacing the oil for applesauce or mashed banana. So you can try one of these fat free ideas at your own risk.

For a protein mug brownie: Simply substitute the tablespoon of cocoa powder with an equal amount of your favorite chocolate protein powder.

Flavor variations: Add a few drops of pure peppermint extract for a mint chocolate brownie in a mug. Or add a drop or two of almond or maple extract or up to half a teaspoon of instant coffee powder.

You can even make a Nutella brownie mug cake by replacing the oil with a spoonful of chocolate hazelnut butter or this Homemade Nutella Recipe.

How to make the recipe

To whip up the chocolate dessert, simply stir together the cocoa powder, flour, sugar or sugar free sweetener, baking powder, salt, oil or nut butter, milk of choice, and pure vanilla extract in a in a coffee mug or heat safe dish.

The brownie can be made in a microwave or a conventional oven. Be sure to grease the mug first if you want to remove the cake before eating it.

If you are baking the mug brownie in an oven, preheat it to 350 degrees Fahrenheit. Once it reaches the set temperature, bake the mug cake dessert for fourteen minutes on the center rack of the oven, then let it cool.

Or if you prefer a microwave brownie, place the dish or coffee cup in your microwave and cook until done. Time will depend on your microwave’s wattage.

I cooked my fudgy mug brownie for a minute, followed by two ten-second increments, so the mug dessert will be ready in about eighty or ninety seconds total.

Store leftovers covered in the refrigerator for up to three days.

Wait, what leftovers?

Ingredients

  • 1 tbsp unsweetened cocoa powder
  • 2 tsp Dutch cocoa or additional regular
  • 3 tbsp spelt, white, or oat flour (Here’s a Keto Mug Cake Recipe)
  • 2 tbsp sugar, or sub erythritol if desired
  • scant 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1 tbsp oil or nut butter (some readers sub applesauce or banana)
  • 3 tbsp milk of choice
  • 1/2 tsp pure vanilla extract

Instructions

  • Notes: If you want to remove the brownie mug cake before eating it, be sure to grease the mug before starting. If you can’t find Dutch cocoa, subbing additional regular will still work; it will just have less of a brownie flavor. I haven’t tried subbing applesauce or banana for the fat and therefore can’t vouch for the taste of that substitution.

If baking, preheat oven to 350 F. Combine all ingredients in a mug or 1-cup dish (or two 1/2-cup dishes). Either bake around 14 minutes, OR microwave until set. Microwave times will vary depending on wattage and if using one or two dishes – I cooked mine for 1 minute, followed by two 10-second increments. What does coffee do to brownie mix? ›

The first and easiest upgrade you can give to your boxed brownie mix is to add a tablespoon of instant coffee to the batter. Adding coffee to your brownies boosts their flavor because its bitter quality balances out sweetness, making it less overpowering. It allows that delicious chocolate flavor to really shine.

Can I add coffee instead of water to brownie mix? ›

If you already have a favorite brownie recipe, try adding one to two tablespoons of instant espresso in with the wet ingredients. If you're making brownies from a boxed mix, you can substitute brewed coffee for the water, or simply add espresso powder in with the dry ingredients.

How to pimp brownies? ›

Add a teaspoon of instant coffee or espresso powder. Throw in a handful of nuts—pecans, walnuts, macadamia, whatever you have on hand. Scoop in a palmful of dried or frozen fruit. Add an extra splash of the top-shelf vanilla extract, or a dab of vanilla paste, or a dash of vanilla powder, to the batter.

Can you bake with a mug? ›

How to Make Cake In a Mug. It couldn't be easier to make a homemade mug cake: Combine the dry ingredients in a microwave-safe mug, stir in the wet ingredients, then cook in the microwave until the cake is done in the middle.

What does adding milk instead of water do to brownies? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

Can I use instant coffee instead of cocoa powder in brownies? ›

Unsweetened cocoa powder: I always recommend using a high quality cocoa powder. Dutch process cocoa will work in this recipe as well. Instant coffee granules: Help to bring out the chocolate flavor in the brownies. You can use espresso powder as well if you have that on hand.

What does adding an egg to brownie mix do? ›

If you opt to add more eggs, say double the amount, something interesting happens. Even though you are adding more moisture, the air bubbles that you catch in the extra eggs add volume, which decreases the density of your final product. This makes your brownies rise and gives them a much more cake-like texture.

Why is my mug cake hard? ›

Apart from the Gluten, insufficient creaming of sugar and eggs will also make a tight texture because there isn't enough air trapped in the mix to give it a lift. Many of the inexperienced bakers who try to bake mug cakes usually end up baking it rubbery.

Do you put eggs in mug cake? ›

So for a single-serving mug cake, just skip the egg; a whole egg will overpower the small amount of batter (and it's pretty tough to divide an egg in quarters). Luckily, you don't need the egg—a pinch of baking powder is enough to help the batter rise up the sides of the mug.

Why did my mug cake fail? ›

Don't overfill your mug with ingredients

Even with the perfect mini whisk, things can still go wrong when making a mug cake. One big mistake involves overfilling the mug. Just like with any other baked good, mug cakes rise during the cooking process.

How much coffee to add to brownie mix? ›

2 teaspoons will do. It will dramatically enrich a deeper cocoa flavor into your brownies. But don't worry, they won't taste coffee-y. Just more intensely chocolatey!

Can you add coffee creamer to brownie mix? ›

If you want to add even more flavor, use one of your favorite flavored coffee creamers instead of water or milk. Just imagine a hazelnut creamer paired with a Nutella swirl mix-in or maybe a Southern butter pecan creamer paired with some toasted pecans as a mix-in. The combo possibilities are endless!

Why are mug cakes so dense? ›

You didn't use self-rising flour

This type of flour gives these baked goods a light and fluffy consistency. Without all the right science involved with flour and other ingredients, cakes can be too dense and dry.

How to make Betty Crocker mug treats? ›

Empty Cake Mix into microwave-safe 9- to 12-oz mug. Add 3 Tablespoons Water or Milk. Stir until cake mix is well blended, about 30 seconds. Microwave uncovered on High as directed below or until surface is mostly dry.

Can you make brownies in a glass bowl? ›

Because of this, brownies baked in a glass pan will need more time to bake. That slow heat-up and additional time can result in brownies with hard, overly-baked edges and a questionably “done” center. Glass can also be a bit heavy and cumbersome and unlike metal, can break when dropped.
