Homemade BBQ Pork Cornbread Skillet — a recipe you love because it's easy to make and is delicious!

This barbecue ground pork dinner is a southern-inspired dish that's great for cookouts, barbecues or even weeknight dinner. Serves a family or a small crowd.

Made with ground pork steeped in barbecue sauce served over doctored skillet cornbread. The spicy-sweet flavors of the pork compliment the cornbread really well. You're going to love it and also how easy it is to prep even though it's homemade.

A great use for ground pork.

Using ground pork makes the cooking process really quick and easy. This is really similar to canned Man-wich or sloppy Joes but it's homemade and tastes a bit more fresh.

Use bottled barbecue sauce or make your own!

You can use store-bought barbecue sauce if you don't have the ingredients on hand, however, if you've got everything, it's very easy to just combine and stir over heat and create your own special sauce.

Start with my easy barbecue sauce recipe and then tweak it as you'd like to create your own homemade sauce!

What's the best boxed cornbread to start with?

To make my cornbread, I like to use Krusteaz cornbread mix. I add a few of my own ingredients to liven it up. It has delicious flavor and moisture. You can use whatever corn bread mix you like best but I just really prefer the flavor of their cornbread to the other box mixes out there.

What sides go well with this barbecue pork?

You could serve this with green string beans, corn on the cob, roasted Brussels sprouts, macaroni and cheese, mashed potatoes and/or coleslaw which is great for warmer weather!

Serving a crowd?

This is such a great recipe for feeding a crowd. You can make a large batch and keep it warm in a crockpot. Serve the cornbread in pie-style slices. You can make the sides homemade, or purchase them from your local deli.

Do I need a cast iron skillet?

I love cooking cornbread in my cast iron skillet but if you don't have one, you can use a pie pan or a square baking pan instead.

Ingredients

  • 2 lbs ground pork
  • 1 ¼ cups barbecue sauce

CORNBREAD

  • 1 box cornbread mix 15 oz
  • 2 large eggs
  • ¼ cup milk
  • 2 tablespoon honey
  • 14 oz creamed corn
  • 4 oz green chilies
  • 2 tablespoon sour cream optional
  • ¼ cup butter melted
  • ¼ cup butter softened reserve to grease pan

Instructions

  • Mix ingredients for cornbread in a bowl until just blended. Smear cast iron skillet with a thick layer of softened butter. Bake at 400˚ for about 20 minutes or until just set in the middle.

  • Brown pork in a large skillet or pot and over medium heat, stirring until pork is cooked through. Add all remaining ingredients and simmer for about 5 minutes to form the sauce.

  • Cut a slice of the corn bread and top with barbecue pork to serve.

    Hi! Looking forward to making this tonight. Quick question, can I leave out the creamed corn and chiles? I don’t have either on hand. Will it alter the bread too much without it?

      Hi Rebecca, if you leave out the creamed corn then the bread is most likely going to be pretty dry. You can add regular corn, some extra melted butter probably 1/4 of a cup, and 1/4 cup of milk as a substitute. If you don’t have regular corn just add the butter and milk. The green chilies are for flavor. You could use chopped jalapeños, or any kind of pepper would be nice. Spicy peppers go really well with the sweet corn but even a diced bell pepper would add some nice flavor if you have that on hand. Heck, you could even use relish if you have some sweet relish in your fridge. I hope this helps. Enjoy!

    Is it ok to just use Polenta as I don’t know if Cornbread mix is available in Australia.

      Hi Cheryl, I think polenta would be a good substitute flavor-wise but cornbread mix is dry. In the US, polenta comes as a tube and is moist. So if that's how it comes in Australia too, you may want to cut out the eggs, cut the butter in half and only add milk if you feel you need it to loosen up the polenta mixture to form a batter when you blend everything together. Then just keep an eye on things as it cooks since the bake time may be different as well. Good luck and thanks for asking!
